Spiralized Vegetables
There are so many vegetables that you can spiralize! From zucchini noodles (zoodles!) to summer squash, cucumber, turnip, and even bell pepper. Spiralizing your vegetables and pairing them with seasoned animal protein is easy and delicious. Many supermarkets now have already spiralized vegetables fresh and ready to be eaten. If you’d like to make your own, spiralizers generally range from $15-40. Zoodles are one of my favorites! Here’s a great Shrimp and Zoodle recipe in a tasty garlic butter lime sauce!
Ingredients:
- 2 tablespoons butter
- 1 lb jumbo shrimp (16-24), shelled and deveined
- 4 cloves garlic, chopped
- 1 pinch red pepper flakes (optional)
- 1/4 cup chicken broth
- 2 tablespoons lime juice (~1 lime)
- 3 medium zucchini, cut into noodles
- salt and pepper
- 1 teaspoon lime zest
- 2 tablespoons cilantro, chopped
